This dish is vegan, gluten-free, dairy-free AND packed with protein thanks to the chickpeas and quinoa. What else could you possibly want?? ☺️

I played around with various spices, mainly I used: cumin, garlic, sea salt, peppercorn, coriander, mustard seeds, paprika, chili pepper, basil, oregano, rosemary, sage & thyme.

Okaaay so that sounds like a long list 🤪 but I love playing around with seasoning until I get a desired taste. My fave part of cooking is you can adjust and create whatever flavors you desire !

💡Tip: cook quinoa/rice in vegetable broth for more flavor!
