2. 1 head broccoli, cut into small florets
3. 4 garlic cloves, sliced
4. 1 red chilli finely sliced
5. 1 bunch spring onions, sliced
6. 140g soya bean
7. 2 head pak choi, quartered
8. 1 1/2 tbsp hoisin sauce
9. 1 tbsp soya sauce
10. 25g roasted cashew nuts * Heat the oil in a non-stick wok. Add the broccoli, then fry on a high heat for 5 mins or until just tender, adding a little water if it begins to catch. Add the garlic and chilli, fry for 1 min, then toss through the spring onions, soya beans, pak choi. Stir-fry for 2-3 mins. Add the hoisin, soy and nuts to warm through

Fasolada. A traditional Greek soup. Dry beans, vegetables and extra virgin olive oil make this a nourishing staple dish in the Mediterranean diet. Enjoy a bowl with a few slices of crusty bread and you’re good to go! Tip: Make this part of your meat free repertoire, it’s so easy and keeps for days 😎
Here’s my take on this classic dish:

2 cups dry white beans 
1/2 carrot, chopped finely
1/2 onion, chopped finely 
1 small celery stick, chopped finely 
1/4 capsicum, chopped finely 
1 can whole tomato’s, strained through sieve 
3 garlic cloves, crushed
Fresh parsley, chopped finely
Fresh dill, chopped finely
Salt and pepper to taste 
Extra virgin olive oil 
Pinch sugar 
Pinch paprika 
Optional: 1 cube vegetable stock 
1. Place dry beans in large bowl, fill bowl with water. Cover and let sit overnight 
2. Strain beans the next day. Place in saucepan, cover well with water and boil for 45 mins, skimming any froth as you go. Drain.
3. Lightly sauté all chopped vegetables in a large pot with a dash of oil.
4. Add strained tomatoes, sauté a further 2 minutes on low. 
5. Add beans, cover with boiled water, lightly season, add a lug of olive oil, cover with lid and boil on medium heat for 45 minutes. Regularly check water levels and top up if needed. 
6. Add fresh herbs. Boil for another 45 minutes or until beans are soft and soup has thickened. 
7. Check flavour. Add more salt if desired. 
8. Serve with a light drizzle of olive oil and crusty bread.

• нут 300 гр⠀
• тахини 2 стл⠀
• кориандр 1 чл⠀
• зира 1 чл⠀
• чеснок 2 зуба⠀
• лук 1/2⠀
• сок 1/2 лимона ⠀
• небольшой пучок кинзы⠀
• соль перец⠀
• много растительного масла для жарки⠀
⠀
Кидаем все в чашу блендер или кухонный комбайн и доводим до мелкой структуры. Нужно чтобы масса легко лепилась руками.⠀
⠀
Кстати, вместо тахини можно использовать арахисовую, миндальную или любую другу ореховую пасту!⠀
⠀
Разогреваем масло до 180 градусов. Если нет фритюра, лучше делать это в сотейнике. Льём масла столько, чтобы оно полностью покрывало наш фалафель. Масло используем такое у которого «точка кипения» выше 180 градусов, таблицу можно найти в сети.⠀
⠀
Температуру масла проверяем кинув в него маленький кусочек, например, сырого картофеля, он должен сразу начать жариться.⠀
⠀
Делаем шарики размером с грецкий орех и обжариваем до коричневой корочки. Чтобы проверить сколько жарить, можно разломить первый обжаренный шарик, там не должно быть сырого центра. ⠀
⠀
Ещё не обжаренный фалафель можно заморозить. 1 месяц ок! ⠀
⠀
Все обжаренные шарики вначале скидываем на бумажные полотенца, чтобы стекло лишнее масло. ⠀
⠀
Подаем со свежими овощами, соусом из тахини или любым другим. Или же можно все это завернуть в лаваш)⠀

Diet dinner for the hubby for tonight, Salade Nicoise.  A French salad I learned to make when I lived in West Africa.  This is one of my favorite salads, best of all it’s very filling.  You could also add boiled yellow potato’s.  The tuna that I used is my favorite canned tuna @wildplanetfoods •••••••••••••••••••••••••••
The Dijon vinaigrette consists of 1 Tablespoon Dijon mustard mixed with 4 Tablespoons olive oil, 2 Tablespoon white vinegar, 1/2 teaspoon sugar & crushed black pepper. You can double or triple this recipe in a jar & leave it in your fridge for future use.

225g self raising flour 
115g of chopped butter 
120g brown sugar 
A pinch of salt 
100g desiccated coconut 
2 lightly beaten eggs
4 table spoons of milk //

Preheat oven to 160 degrees Celsius
Line a loaf tin with grease proof paper 
Sift the flour and salt into a bowl, rub in the butter to make breadcrumbs 
Stir in the sugar, coconut eggs and milk until soft

Small handful Fresh Parsley + more for garnish
Olive Oil (optional)
Paprika (optional)

Place all ingredients except olive oil, paprika, and extra parsley in a food processor. Pulse until hummus is smooth, adding more water if needed.

I love leftover snacking! I had a super small amount of tossed salad leftover. I usually like to top warm cheesy flatbread or a frittata with leftover salad, but I knew I had some red pep hummus that needed to be eaten soon, so...a new leftover creation was born. Veggie Dumplings

Ingredients:
- Dumpling wrappers
- Carrot
- Egg
- Vermicelli
- Mushrooms
- Hard Tofu - Bamboo shoot

Steps:
1. Clean all the veggies and dice.
2. Stir-fried the egg.  Mix with the diced veggies and hard tofu.  Season and taste.  Set aside.
3. Wrap the dumpling mixtures as per 2/ above with dumpling wrappers.
4. Once done, suggest to put them in refrigerator for an hour in order to keep the shape.
5. Boil water and put dumplings into boil.  Add green vegetables for decoration, if needed.

Czekolada 🤩 czy ktoś jest w stanie jej się oprzeć? Ja na pewno nie 😅 dziś na drugie śniadanie dla Natalki oraz do kawki dla mnie zaserwowałam placki czekoladowe bez cukru. Wyszły idealnie wilgotne i puszyste, słodyczy dodał banan, a kwaśne porzeczki nadały fajnego kontrastu. Placki podane z czekoladą i owocami (dla mnie) lub z samymi owocami smakują wyśmienicie 😋

1 jajko 
3/4 szkl mleka (u mnie migdałowe)
1 łyżeczka proszku do pieczenia
0,5 łyżeczki sody 
1 łyżka oliwy 
2 łyżki kakao
3/4 szkl porzeczek czerwonych 
Banana rozgnieść widelcem na papkę, jajko rozdzielić na białko i żółtko. Żółtko, oliwę i mleko dodać do banana, wymieszać. Następnie dodać suche składniki (mąkę, proszek, sodę, kakao) i wymieszac. Wrzucić porzeczki. Białko ubić na sztywną pianę mikserem, dodać do masy i delikatnie wymieszać łyżką. Placki smażyć na rozgrzanej patelni na średnim ogniu, po zrumienieniu odwrócić. Gotowe 😋

CURRY VÉGÉTARIEN AU TOFU 🌿😍🎎 INGRÉDIENTS : 350 g de tofu ferme en bloc - 1 petit brocoli détaché en fleurons - 2 piments rouges - 2 carottes - 4 oignons verts - 8 champignons de Paris - 3 gousses d'ail - 1 boîte de lait de coco - 2 c. à soupe de curry - 2 c. à soupe d’huile végétale - 1 c. à soupe d’huile de sésame grillée - Des feuilles de basilic thaï - 6 ml de sauce soja - Sel, poivre

RECETTE : Epongez et coupez le tofu en cubes. Pelez et hachez l'ail. Emincez les oignons verts. Nettoyez, épépinez et coupez les piments rouges en rondelles. Pelez et coupez les carottes en rondelles. Lavez et coupez les champignons de Paris en lamelles. Dans un wok, faites chauffer l’huile végétale et l’huile de sésame à feu vif. Faites-y cuire les cubes de tofu jusqu'à ce qu'ils soient bien colorés. Retirez les cubes de tofu du wok et réservez-les de côté. Toujours sur le wok, à feu moyen, colorez légèrement le piment, les oignons, les carottes, les champignons, l’ail et les fleurons de brocoli. Salez et poivrez. Laissez cuire pendant 6 minutes. Ajoutez ensuite le lait de coco, le curry et la sauce soja. Mélangez bien et laissez cuire 5 minutes. Ajoutez les cubes de tofu et laissez encore cuire quelques minutes supplémentaires, en mélangeant bien.
Servez ensuite directement dans les assiettes décoré de basilic thaï et accompagné de riz ou de quinoa!

Beetroot! This glorious gift that comes in once I’ve had my melon fix :)
Beetroot roasted, baked, raw, pickled or simmered in their skins in a well seasoned broth. Love the stuff and any which way! 
Here’s something you can do this evening with a few store cupboard basics. 
This recipe was incredibly simple! Cut into 6 or 8 wedges, rub with sea salt and a really good glug of oil of your choice! Grab herbs from the veg patch (thyme and sage works really well) and add a squeeze of lemon. If you’re anything like me you’ll roast the squeezed lemon with the beetroot at the same time and give it a stir through part way. 
Add a few garlic cloves to soak up some of those flavours and squeeze them over dinner at the end!
Throw in a bay leaf or two and some freshly ground black pepper. 
Roast at 180deg C for about 40 mins depending on the size of your beetroot wedges. 
Towards the end of the cooking (15 mins before)... add a splash of gold... rich balsamic vinegar and a drizzle of honey (or not - if you want a completely vegan version) 
I choose not to add this part at the beginning to prevent the dish from burning. 
You’ll end up with a deliciously sweet, savoury and tangy flavour with a good gooey glaze.. I do live a bit of a close up! Don’t you?

Grab herbs from the veg patch (thyme and sage works really well) and add a squeeze of lemon. If you’re anything like me you’ll roast the squeezed lemon with the beetroot at the same time and give it a stir through part way.
Add a few garlic cloves to soak up some of those flavours and squeeze them over dinner at the end!
Throw in a bay leaf or two and some freshly ground black pepper.
Roast at 180deg C for about 40 mins depending on the size of your beetroot wedges.
Towards the end of the cooking (15 mins before)... add a splash of gold... rich balsamic vinegar and a drizzle of honey (or not - if you want a completely vegan version)
I choose not to add this part at the beginning to prevent the dish from burning.
You’ll end up with a deliciously sweet, savoury and tangy flavour with a good gooey glaze.. I do live a bit of a close up! Don’t you?

Una ricetta che AMO ♥️, quasi più del Gazpacho 🤫🤫🤫, questa volta però è stato un Salmorejo a metà perché non ho voluto aggiungere Jamón, oggi rimaniamo sul vegetariano!

🍅Pomodori, 🍞mollica di pane rafferma, aglio e olio d'oliva extravergine, per ultimo 🥚uova soda e 🍃una foglietta di basilico!! Un SALMOREJO più semplice dal solito ma con le stesse vitamine che ci vogliono per lavorare tutta la giornata 😉!
