Bang Bang chicken
This recipe isn’t the authentic one, which is made of shredded chicken and vermicelli noodles. So you won’t find it in the street markets of China, Vietnam or even Singapore. This recipe is based on the exquisite dish on the menu of Northampton’s @zapato_lounge .
The other day Tamara @tam_s85 was tucking into this and I couldn’t stop watching her eat. Now I don’t suffer very much from FOMO, I’m mostly thankful for the cards I’ve been dealt, but I do suffer from FOMOF (fear of missing out on Other people’s food(I made that up, rubbish I know)), in other words, food envy. If you go on a dinner date with me, I’d rather eat your food.

Bang bang your chicken strips and bread them. I used Panko breadcrumbs as recommended by @jodyannsleight and @fashionbake8 .
For your sauce blitz : groundnut oil, toasted sesame oil, peanut butter, garlic and ginger, sesame seeds, coriander and chilli, soya sauce and lemon.
In a wok sauté your carrots, broccoli, onion and any other veg you fancy. Put your sauce into the wok.
Boil noodles, once cooked put into wok.
After a few minutes dish up and serve with salad, peanut sauce and your chicken, enjoy.
