The cool breeze this morning made me certain that a carmelized Vidalia onion tart would need to be present at Sunday dinner. .
To make your own show stopping version of this, you'll need 3 #georgiagrown
Vidalia onions, one sheet of frozen puff pastry, 4 oz of goat cheese, and a little thyme. .
First cut your onion into "steaks" and lay them in a pan coated with olive oil over medium low heat. Season with salt, pepper, and thyme. Cover the pan and let the onions carmelize until they're just becoming translucent on top. . . . .
Thaw your puff pastry, and then coat the center of it with goat cheese. .
Carefully transfer your onions to the pastry using a wide spatula. .

Bake at 350 until GBD (Golden, brown, and delicious). If you'd like to go the extra mile, drizzle with your choice of balsamic vinegar-- I used one infused with honey and Serrano peppers. . .
