I remember when Amanda took this picture (270lbs.) I was having a difficult time breathing. Everything felt squished up to my neck, and it was a very uncomfortable to crouch like this. I remember feeling guilty that I couldn’t crouch down to my kids and interact with them. I was trying so hard in this picture to appear happy, and comfortable. I didn’t want to pick pumpkins that day (as much as I love this tradition) I just wanted to go back to the car and rest.

I remember trying to sleep with all this weight. Even while Laying down on my back, everything felt like it was squishing my neck making it difficult to sleep. I wonder how many times I went apneic while I slept? Probably every time I was awakened, multiple times a night. Both Amanda and I would snore like crazy, and wake up with a sore throats or a stiff necks (trying to find the right position to sleep in). I used to blame our mattress for those maladies, it’s obvious now why we were NEVER comfortable.

These #transformationtuesday posts are a great reminder of where I’ve been, and where I am headed. No more stiff necks, sore backs or throats in the morning. Well rested evenings are the norm now, and pictures are more fun to take. An overall well-being has crept into our lives, and I wouldn’t change it for anything! That being said, we had our first high carb meal in over a year the other day, and ate over 500 carbs in one meal! That’s almost a months worth…in one meal! To mitigate the symptoms, we OMAD and then went 21 hours before our next meal. I ran 6 miles prior to the meal, and 12 miles after the meal (about 15 hours later). Both Amanda and I had pasta and decadent desserts, and experienced an uptick in heart rate, and a slight headache. All negative side affects were basically gone by the next evening. I didn’t experience any weight gain, or noticeable swelling.

The point of that meal was to prove to ourself that if we plan those meals, and have them on a very rare occasion it’s no different than a healthy person deciding to have a dessert, or alcohol. Almost everything was cloyingly sweet…with the exception of some amazing garlic bread. It opened our 👀 to how horrible our 🥘 choices were.KCKO

I used to be a big Diet Coke addict (I could polish 6 cans a day, easy). Luckily, I made a shift to seltzers and occasionally grab a stevia soda or a sugar free energy drink.  Water is always the best, but its good to have some other options around.
.
Here are some of my favorite drinks. You’ll see I have zero allegiance to a particular brand and I like to shake things up depending on what’s on sale and coupons. And trust me, my fridge isn’t always this organized, but I was inspired this weekend.
.
As far as what’s in my fridge this week:
.
1.Top row is generally saved for meal prep and protein that I’ve made in advance to use throughout the week. Here I do a combination of ready to go meal prep and prepping large batches of a meal/protein in a big container. I’ve also got some fresh berries, greens, eggs, and some sugar free granola (I just got some from @thesolacompany and I’m pumped)
.
2.Second row is drinks on drinks. I aim for at least 2.5 liters of regular water and I’ll do a handful of seltzers a day. I usually do coffee before the gym, but every now and then I’ll grab an energy drink. The sugar free pear Red Bulls have been a favorite recently.
.
3.Bottom row has a variety o stuff ranging from bacon, mushrooms, eggs, tomatoes, and some sola bread.
.
4.Drawers have a lot more greens, peppers, lemons, and avocados who are on a strict calendar for firmness. I treat that as a science.
.
5.And finally, the cheese drawer … gotta have the cheese
.

This morning’s breakfast at the hotel.  Smoked halibut, tomatoes, Brie, strawberries, walnuts and a hard boiled egg. And of course my espresso shots. It takes a lot of hard work and discipline to lose over 100 pounds and that’s why I choose not to have the mentality, “It’s ok. I’m on vacation.” I travel often. I treat vacations as a part of my lifestyle and incorporate my eating life into it. The only thing I do change is the fasting. I don’t fast during the vacations. Down 6 pounds in the last 5 days just from drinking my ketones! No exercise because I had the flu (well besides taking care of 2 kids and constantly disinfecting the house lol). I'm not really eating right, well because breastfeeding makes me crave all the sweet things at night when I've lost control 😂😆🤣 but my ketones do help with those cravings! .
. 💜❤💙Plus they give me LIFE so I can not only function during the day but live my days with purpose! Even if I didn't get the added bonus of fatloss ... this part would make drinking my ketones so worth it! Thank God I get both and don't have to choose between the two though!💚💛🧡

I’m really picky (discerning might be a more neutral word) about protein/snack bars. I don’t like to taste the protein powder and I particularly don’t like to feel mega-bloated and gassy for 10 hours afterwards either. It took some patient experimentation for me to find bars that I know don’t spike my BG or cause the dreaded bloat. The result is a snack arsenal that is slim but delicious and convenient.⁣⁣

This bar has officially earned its place in that arsenal. *cue the trumpets - but not the kind from eating bars that give you gas, please and thanks*⁣⁣

The texture is fudgy, not at all dry or powdery, and the flavor - oh man, it’s like a not-too-sweet creamy hot cocoa vibe for me. I’ve only tried the chocolate but they also offer “cookies and cream,” and “vanilla” options. The cocoa butter chips in this flavor are SO GOOD I CANNOT WORDS IT. ⁣⁣

I was doing really well on the Keto diet at first. I was following the do’s and don’t. I strangely found it not as hard to cut my carbs down drastically. I was drinking SO much water. I was logging my food to make sure I was in my macros.

BUT THEN I was in all these groups of people reporting how much weight they had lost - 18 lbs, 24 lbs, 30 lbs! And I have only lost 6 lbs. That’s It!!

I slowly lost motivation. Then started small cheats. Cheat bites became cheat meals which became cheat weekends. Yikes!

I’m really, really bad when it comes to eating breakfast. Normally, I don’t eat it unless (1) I’m Hungover, (2) I’ve made brunch plans, or (3) My boyfriend makes me something in the morning. Obviously breakfast is a super important meal. It fuels your body, keeps you going, and wakes you up. I decided to start trying some meal replacement bars (I’ve got quest and slimfast) it’s difficult to find Keto options so I was limited in what I could get but I got a variety of quest bars and I got the 2 Slimfast flavors I could find. Today I’m trying the whipped chocolate. .......…… HONEST REVIEW: For a Keto option this is very good especially for my chocolate lovers and those with a sweet tooth. I could automatically tell it used Erythritol which wasn’t an issue for me personally but it must be a decent amount included in as the bar definitely had a cooling effect in the mouth. It was a tiny bit chalky which I notice with products that use cocoa powder but not a terrible mouth feel. Honestly instead of a breakfast I would use this as a on the go fat bomb. I will probably start buying these to start including in my rotation of sweeter Keto! Very dense and heavy though so you could have 1/2 a bar and be more than satisfied!

When is the last time you had a slice of low carb or gluten free bread that made you just want to keep eating it plain out of the oven? This bread is so good the main issue with it is not eating it all in one go. You can easily substitute pine nuts for another cheaper nut meal. Once it’s cooled you should slice it into very thin roughly 50 gram slices and eat it on it’s own or any way you would normally use bread. ———————

1 1/2 c Almond Milk
6 Eggs or flax eggs
2/3 c Butter, melted or coconut oil

1/4 c Pumpkin Seeds to top loaf

Preheat oven to 350 degrees Fahrenheit and cover a bread pan with parchment paper and the 1 Tbs butter. 
Mix together all of the dry ingredients until a consistent mealy texture. Add in almond milk, eggs, and melted butter. Mix until well combined. 
Pour into prepared bread pan and sprinkle the remaining 1/4 c pumpkin seeds over top
Bake for 45 minutes to an hour, checking every fifteen minutes. Let cool before cutting.

This was 100% keto friendly and it was the best ever!!! So easy and so delicious! Eating this made me enjoy keto 100% and enjoy Christmas 100%! Not worrying about cheating or any of that!

INSTRUCTIONS:
1️⃣ Get about 300g of veggies of choice chopped up!
2️⃣ Crack 12 eggs and scramble them up in a bowl!
3️⃣ Have veggies chopped into a cooking tray!
4️⃣ Pour the eggs into the tray with the veggies! Mix it up, stir it up!
5️⃣ Then cook for about 35 minutes at 355! May be adjusted accordingly!

😱 Then grab a side of some Brussel Sprouts cooked into some delicious Bacon grease that makes it taste soooo good! With a side of Cauliflower!

MACROS HERE!
✅ 68g FAT
✅ 22g CARBS - 14g FIBER
✅ 52g PROTEIN!

This was meal 1 out of the day and I had one Keto chocolate chip cookie after meal 2! Macros were on point and I stuck with healthy delicious food! That’s the beauty about Keto!

Transformation Tuesday!
Transformations look different for everyone. Mine is as much physical as it is mental. 
The picture on the left is the only picture I have as a comparison, and it was actually a few months into Keto.
I was miserable taking it, feeling depressed how I looked. But I had a sense that my body had begun to change, and I needed to take a photo to compare in the months ahead.
I’m so pleased I did!  My weight loss on the scales was really slow. So much so that I ditched the scales altogether and began measuring myself. 
Arms, waist, hips, thighs. 
As the months went by, and the measurements got smaller, I didn’t care then what I weighed. I knew it was working . 
My progress has been slow. Partly because I like to eat, and frankly could eat less each day if I wanted faster progress.
Partly because I had messed up my metabolism yo- yo dieting over the years
And perhaps because I was happy to do it that way. Knowing that I was going in the right direction.
After a year, I’m now so much happier with the way I look. And that impacts on my confidence, my self worth. 
Which then impacts on how active and adventurous I am, doing things with my family ( like kayaking) which I wouldn’t have had the confidence to do before.
Weight loss is so personal. 
Go at your own and pace.
Celebrate and acknowledge your own victories. 
My body may look like someone else’s “before “ body, it may also be someone’s goals. We are all different and that’s what is wonderful about us all. Let’s enjoy our differences, find them interesting and rejoice in them 
I’m still going, still working on keeping my diet the best it can be - and working on fitness to be the healthiest I can be 🥰
