Baked Ricotta and Pumpkin Spinach
Serves: 2

Ingredients

350g uncooked pumpkin, chopped
300g ricotta cheese
1 garlic clove, crushed
60g baby spinach leaves
100g cherry tomatoes, chopped in half
60g red onion, sliced
100g cucumber, chopped
2 tsp. (10ml) extra virgin olive oil
30ml freshly squeezed lemon juice
2 tsp. Italian herbs
Dressing
5ml extra virgin olive oil
3 tbsp. (45ml) balsamic vinegar
2 tsp. (10g) wholegrain mustard (no added sugar)
Directions

1. Preheat oven to 200 degrees.  2. Combine the ricotta cheese and one garlic clove crushed in a small baking dish. 
3. Season with Himalayan salt. Bake the ricotta cheese in the oven for 45 minutes or until golden brown. Set aside
4. Whilst the ricotta cheese is cooking, add pumpkin onto a tray and drizzle olive oil over the top and season with Italian herbs. 
5. Bake the pumpkin for 25-30 minutes or until golden brown
6. Add the baby spinach leaves, tomatoes, onion and cucumber in a large bowl. 
7. Mix in the baked pumpkin
Crumble the baked ricotta cheese over the top
8. In a small separate bowl combine the dressing ingredients and pour over the salad. Combine well
9. Divide the salad into two serves. Dish one serving of the baked ricotta and pumpkin spinach salad and refrigerate the second serving for tomorrow's leftover

I’m feeling quite deflated today with how big I am, why my body is suddenly not losing weight the same way around this time as it did last time and I think everything’s just getting to me! To be honest, it isn’t easy to be creative or make recipes in a backpacker. I love cooking, and it is my happy moment, but I love it when I can have all the things I need and mostly when I am in my own so that I can fully enjoy the moment. Anyway, I made these oats that tasted good and even better in front of the swimming pool. I’ve heard of this mix (dates and Tahini) and I couldn’t wait to taste it.
- 1/2 cup of oats
- 2 dates or 2 spoons of maple syrup
- 1 spoon of Tahini
- 1 cup of almond milk
- 1 cup of water
- few drops of vanilla essence
For the toppings I used coconut yogurt with some almonds and these carob buttons that I am obsessed with 😍

Cocinar es mi momento feliz, pero me gusta hacerlo especialmente cuando estoy sola y tengo los ingredientes y las herramientas necesarias. Aún así, a veces cocino jajaj. Aquí os dejo este desayuno. "My pregnancy story and results so far 👇
So I was on the GOLD PACKAGE (Shakes and Premium capsules) when I fell pregnant, after speaking to my midwife she was happy for me to continue using them, so I did. .
During the early stages of my pregnancy I suffered with really bad morning sickness which made me not want to eat at all, so the shakes were perfect to make sure that myself and baby were getting all the nutrients we needed. .
Once I got past the 12 weeks stage the sickness calmed down 🙌🏼 I felt amazing, was full of energy, gaining weight steadily and was able to continue with everything as I did before I was pregnant right until the day I gave birth to my healthy 8lbs 6oz baby girl.

INGREDIENTS
1 cup rolled oats 
¼ unsweetened almond milk
½ cup mashed banana
1 tablespoon apple cider vinegar
1 tablespoon baking powder
½ teaspoon cinnamon
¼ cup sliced strawberries, plus more for serving
Maple syrup, for serving
INSTRUCTIONS
1. In a blender, add the rolled oats and blend until the oats become flour-like. Remove the oat flour from the blender and set aside.
2. Add the almond milk, bananas and apple cider vinegar to the blender, and blend until the mixture is smooth with no big lumps. 
3. Transfer the oat flour to the blender. Then add baking powder, cinnamon, strawberries and pulse a few times to combine, being careful not to over blend.
4. Heat a nonstick griddle over medium-low heat. Spray with coconut oil cooking spray or leave the pan dry.
5. Pour 1/3 cup of the batter into the hot griddle. Place the sliced strawberries on top. Cook for 2-3 minutes, until small bubbles start to form on the top and the edges firm up. Flip the pancake and cook for another 1-2 minutes until the pancake is cooked through. Repeat for the remaining batter. Makes 4 pancakes.
6. Serve immediately with fresh strawberries and maple syrup, if desired.

INGREDIENTS
1 cup rolled oats 
¼ unsweetened almond milk
½ cup mashed banana
1 tablespoon apple cider vinegar
1 tablespoon baking powder
½ teaspoon cinnamon
¼ cup sliced strawberries, plus more for serving
Maple syrup, for serving
INSTRUCTIONS
1. In a blender, add the rolled oats and blend until the oats become flour-like. Remove the oat flour from the blender and set aside.
2. Add the almond milk, bananas and apple cider vinegar to the blender, and blend until the mixture is smooth with no big lumps. 
3. Transfer the oat flour to the blender. Then add baking powder, cinnamon, strawberries and pulse a few times to combine, being careful not to over blend.
4. Heat a nonstick griddle over medium-low heat. Spray with coconut oil cooking spray or leave the pan dry.
5. Pour 1/3 cup of the batter into the hot griddle. Place the sliced strawberries on top. Cook for 2-3 minutes, until small bubbles start to form on the top and the edges firm up. Flip the pancake and cook for another 1-2 minutes until the pancake is cooked through. Repeat for the remaining batter. Makes 4 pancakes.
6. Serve immediately with fresh strawberries and maple syrup, if desired.

Mientras hacía otras cosas he cocido al vapor dos patatas, media coliflor y dos remolachas y por la mañana dejè en remojo una taza de pistachos y otra de anacardos en diferentes recipientes. Cuando han terminado de hacerse las verduras al vapor las he puesto en otro recipiente para que enfríen y poder manipularlas y mientras he preparado los patés (tenéis la receta unos posts mas abajo), he montado los platos y a comer!. En la foto tenéis aporte de vitaminas, proteínas, vitamina C, antioxidantes, hidratos... que mas se puede pedir! Buen provecho 😘😘

Their big menu means their is so many options to choose from. So my favourite thing to do is already a few dishes to share. This way you get to try so many delicious things🤩. I personally love their coconut rice mixed with sauces from all the vegetable dishes. And have I mentioned the vegetable spring rolls🤩. The waiters are always lovely and helpful and the food comes super speedy. Which is lucky because Im always hungry. Go show your support to this lil restaurant. .
