Baked aubergine with warm quinoa tabbouleh and tomato salsa sauce!
For aubergine:
2 medium aubergines
2 tbsp canola oil
1 tbsp crushed garlic
Pink salt
Smoked paprika powder
Cumin

For the quinoa tabbouleh:
1 cup quinoa
2 cups water
2 handful cherry tomatoes
1/4 brunch parsley
4 stalks spring onions
1/2 cup mint leaves
1 tbsp olive oil
1 lemon (juiced)
Pink salt
Pepper

Tomato salsa:
2 medium ripe vine tomatoes (blended)

Instructions:
1- Heat the oven to 180 C (360 F) and line a baking tray with parchment paper.
2- Half the aubergine and drizzle over the oil, garlic and spices. Bake for 25 minutes.
3- While the aubergine is baking, cook the quinoa with water and simmer for 25-30 minutes. Keep aside to cool.
4- chop the parsley, mint leaves, spring onion and tomatoes. Combine all ingredients and blend with lemon juice and olive oil.
5- top the tomato salsa sauce over the aubergines and bake for another 15-20 minutes. Enjoy. #Healthybyhuda

Delicious homemade pancakes 🥞 topped with cherries and a drizzle of homemade raspberry jam 🥰
Ingredients : 👉🏼 1 cup all purpose flour 👉🏼 1 tbsp baking baking powder 👉🏼 2 tbsp coconut sugar ( or sugar ) 👉🏼 1 egg 🥚 beaten well 👉🏼 1 tbsp vegetable oil ( for example canola ) 👉🏼 1 cup of almond milk ( or any milk ) 👉🏼 pinch of sat
Preparation :
Place sugar,flour,salt, and baking powder in a large bowl.
Don’t mix the ingredients,try to empty the center of the bowl to pour in the egg,oil,and milk.
Now mix all ingredients together until you achieve a smooth mixture.
Get your griddle or frying pan and put it over medium heat .
Pour 2 or 3 tbsp of the batter into the griddle.
Top with your favorite fruit,cinnamon,and ice cream 🍨
Or maple syrup instead .

You can always have any of your favorite veggies : 👉🏼handful of cherry tomatoes 🍅
👉🏼broccoli 🥦
👉🏼peppers 🌶
👉🏼Aubergine 🍆 and courgettes 👉🏼 2 tbsp olive oil 👉🏼 1 tbsp dried thyme 👉🏼 1 tsp oregano 👉🏼 1 tsp basil 👉🏼 1/2 tsp white pepper 👉🏼 salt and 1/2 cup Greek yogurt
Cook pasta as packet directions
1. Place all chopped vegetables on a baking tray, drizzle with 1 tbsp olive oil, white pepper and herbs.
Bake for 25-30 minutes
2. Meanwhile , soak chopped broccoli 🥦 in hot water for 2 minutes, drain and put aside .
3. Add cooked pasta to vegetables with broccoli, yogurt and the remaining olive oil.
Toss to combine

Baked berry crumble!
Ingredients
2 cups frozen mixed berries
3 tbsps coconut sugar (Finley blended)
1 tsp vanilla extract
2 tbsp natural cocoa powder
3 tbsp coconut oil
1 cup old fashioned rolled oats (gluten free)
1 cup oats flour
Instructions
1- Preheat the oven to 200 degrees F.
2- In a baking dish, add the berries and bake for 15 minutes until soften.
3- In a big bowl add the oats, oats flour and all the ingredients and use a wooden spoon to mix until they’re all combined. If the mixture is still dry, add coconut oil, (I’ve added water for healthy options.) mix until everything is moist and the coconut oil is evenly distributed.
4- Bake for 25-30 minutes, until crisp, golden brown and the berries are bubbling.

Kale and chickpeas salad! 💚
This salad is my absolute new favourite . It’s super healthy, flavorful, filling and simple!
To make it: 👇🏻
Ingredients
6 cups kale leaves ( keep stalks for juicing or use them in smoothies.)
1 cup chickpeas. (Rinsed, drained and dry with tea towels. )
1/2 cup white cabbage (thinly sliced)
1 tbsp olive oil
3 tbsps paprika powder
Dressing:
1 head garlic
1/2 cup tahini
1- 2 tbsp olive oil
2 lemons ( juiced)
1- 2 maple syrup
Pink salt and pepper
Warm water
Pine nuts (optional).
Instructions
1- peel garlic cloves but leave the skin on. Preheat oven to 200 degrees F
2- Add drained chickpeas to a mixing bowl and toss with oil and seasonings.
3- Add garlic cloves and seasoned chickpeas to a baking sheet. Drizzle garlic with s bit of olive oil. Bake for 20-25 minutes or until the chickpeas are slightly crispy and golden brown and the garlic is fragrant and slightly browned. Remove from oven and set aside.
4- Squeeze garlic out of skins and add to a mixing bowl. Add all remaining dressing ingredients and whisk to combine. Taste and adjust seasonings as desired, adding more lemon for brightness and maple syrup for sweetness. Set aside.
5- Add kale to a large mixing bowl. Before adding dressing, add 1 tbsp each lemon juice and olive oil to the kale and massage with hands to soften the texture. Add the dressing as desired.
6- Top with chickpeas and pine nuts. Enjoy! 💕#healthybyhuda #kale

I promised you I’d share my sweet potato flat bread recipe, here you go, I topped it with homemade falafel and homemade beetroot hummus and drizzle with tahini dressing. 👇🏻
Sweet Potato Flat Bread

Ingredients:
1 large sweet potato
1 1/2 cups organic strong flour (I used wholegrain flour). Instructions:
1- Begin by boiling the sweet potato, once they’re very soft, take them out of the pan and peel whilst hot.
2- Mash the sweet potato with a fork and mix with the flour in a big bowl.
3- Mix the dough well and on a floured surface roll into a thick log and cut into 6 portions.
4- Roll out each portion into individual circular shapes.
5- Meanwhile heat a skillet on a medium heat and cook the wraps one by one for 2-3 minutes on each side.
Eat whilst hot or store the wraps in a grease proof paper lined tea towel. This will keep them soft and fresh for longer!

Grilled salmon with mango- avocado salsa. Served with coconut steamed brown rice! It’s full of good fats and good carbs. To make it: 👇🏻
Grilled salmon with avocado- Mango salsa and coconut rice
Ingredients
6 oz skinless salmon fillets
3 tbsp olive oil, plus more for grilling
2 tbsps tamari sauce (or light soya sauce)
2 tsp lemon zest
3 tbsp fresh lime juice
3 cloves garlic, crushed
Salt and pepper, to taste

Coconut rice
1 1/2 cups coconut water
1/2 cup organic coconut milk
1 1/2 cups brown basmati rice (rinsed well and drained well)
1/2 tsp salt

Avocado-Mango Salsa
1 large mango, peeled and diced
3/4 cup chopped red bell pepper
1/4 cup chopped fresh coriander
1/3 cup chopped red onions
1 large avocado, peeled and diced
1 tbsp fresh lime juice
1 tbsp olive oil
1 tbsp coconut water
Salt and pepper, to taste

Instructions
For the Salmon
1- In a baking dish whisk together olive oil, lemon zest, lime juice, garlic and season with salt and pepper to taste.
2- Place salmon in baking dish, cover and allow to marinate in the fridge for 15-30 minutes, then flip salmon to opposite side and allow to marinate for 15-30 minutes longer. Preheat a grill over medium-high heat.
3- Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through ( turn carefully as the salmon will be fragile).
For the coconut rice
1- while salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil. Cover and simmer until liquid has been absorbed.
For the avocado-Mango salsa
1- while the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, coriander, red onion, avocado, lemon juice, olive oil and coconut water. Season with salt and pepper to taste.
2- Serve salmon with coconut rice top avocado mango salsa. Enjoy.💕 #Healthybyhuda #avocado #protein

After my workout, I was craving sweet potato hash for my breakfast! So delicious and took me only 20 minutes to make! 👌

Sweet potato hash with eggs and baby kale!
Ingredients
1 sweet potato
1 red onion (chopped)
2 garlic cloves
1 cup baby kale leaves (chopped)
Salt and pepper
4 eggs
Garnish
Chilli flakes
Fresh coriander
Sesame seeds
Spring onions
1 avocado, halved and sliced

Instructions
1- grate the sweet potato in a bowl. Chop the red onion and garlic.
2- Heat a large frying pan on medium heat and add a small drizzle of oil, add the red onion and garlic and fry for a minute. Add the sweet potato, a pinch of salt and fry for around 5 minutes.
3- Add the baby kale and cook for a couple of minutes, until the spinach has wilted.
4- Make 4 indents in the hash and crack an egg into each indent. Cover with a lid and cook for around 3-4 minutes, or until the egg whites are firm.
5 Garnish with chilli flakes, sesame seeds, coriander, spring onions and avocado. #healthybyhuda #mydubai #avocado

Delicious buckwheat pancakes!
1 cup buckwheat flour (or any flour)
1 cup milk (any) ( I’ve used homemade almond milk)
2 tbsp pure butter
1 large egg
1 tsp baking powder
2 tbsp maple syrup
Pinch of salt
-1 In a small bowl, whisk together flour, backing powder, and salt. Set aside.
2- In a medium bowl, whisk together milk, butter and egg.
3- Add the dry ingredients to the milk mixture and stir.
4- Heat a large skillet over medium heat, and coat generously with rapeseed oil.
5- pour the batter onto skillet. Cook 1-2 minutes on each side. Top with fruits and drizzle with chocolate. Enjoy! #HealthyByHuda #pancakes #love #pretty

How to make it:
Mashy avocado peas -
1 tbsp avocado oil
1 tbsp chopped yellow onion
2 cups sweet peas
5 fresh mint leaves, finely chopped
2 tbsp water
1 avocado
1 tbsp lemon juice
Pink salt
Instructions:
In the bowl of a food processor, add the avocado, lemon juice and half of the cooked peas. Process until the mixture is smooth. Add the remaining peas, and pulse to just combine.

Homemade sweet potato wraps, topped with homemade avocado mayonnaise, boiled egg, sliced avocado and rocket salad. 🙌🏻
Oats flour and sweet potato flat bread: to make it;👇🏻
1 cup sweet potato
1 cup oats flour
1- Begin by boiling the sweet potato, once they’re very soft, take them out of the pan.
2- Peel them while they’re quite hot, mash the sweet potato.
3- Add sweet potato and flour in a big mixing bowl, and mix.
4- Continue to mix the dough until it’s formed.
5- Add flour on the work surface, and place the dough on it.
6- Roll it into a thick log then cut the log into six portions.
7- Take a piece, begin to roll it out, turn it on the other side and continue to roll out.
8- Creat a nice round shape.
9- Heat a skillet on a medium heat, place the roti on it and allow it to cook for 2-3 minutes on each side.
10- Store the bread on a plate lined with a tea towel, this will keep the bread soft. Top with your favourite toppings. Enjoy! #Healthybyhuda #avocado #love #hungryaf

California Salsa
Ingredients:
1/2 medium onion
1 jalapeño pepper
1/4 cup fresh coriander leaves
1 tsp fresh lemon juice
Pinch of pink salt
2 tbsps extra virgin olive oil
6 ripe Roma tomatoes - cut into quarters
Instructions:
1- Place onion, jalapeños, coriander, lemon juice, salt, and six of the tomato quarters into the food processor.
2- Blend for 10 to 15 seconds.
3- Add the remaining tomato quarters.
Blend on and off, until desired consistency is reached.
Serve with tortilla chips or flat breadsticks. Enjoy. #avocado #homemade #healthybyhuda

1 cup peanut butter
2 tbsp coconut oil
100g dark chocolate
Handful toasted salted peanuts
Sea salt
Instructions:
1- Blend pitted dates and half cup peanut butter to form a dough. It should stick together in a big ball. Line a loaf tin with two strips of greaseproof paper and flatten dough into the tin. Use your palm if your hand dipped in a little water to help flatten it.
2- Gently melt chocolate and coconut oil over a bowl of simmering water. Once melted, pour over your fudge bar. Allow to cool for few minutes before adding the remaining 3 tbsp of peanut butter to the chocolate.
3- Sprinkle over salted peanuts and allow to set for at least 30 minutes.

1 cup cubes papaya
1 medium ripe mango
1/2 cup fresh orange (juiced)
1 tbsp chia seeds
Squeeze of lime
Blend all ingredients until smooth. Enjoy! #healthybyhuda

Purple cabbage-Blueberry Ice Cream. 💜
Made with:
1 cup chopped purple cabbage
1 1/2 frozen banana
1 cup frozen blueberries
2 tbsp grated coconut
1 tbsp maple syrup
Blend until smooth and creamy.

Chickpea, turmeric pancakes, topped with sun- dried tomato sauce, guacamole and chopped mangos. 👌🏼
Tomato sauce: You need:
1 cup whole sun-dried tomatoes (chopped)
1 tsp dried basil
1 tsp dried oregano
1/2 tsp pink salt
1 tbsp apple cider vinegar
1 tbsp extra virgin olive oil
2 medium ripe vine tomatoes (chopped)
Place all ingredients into a large bowl, toss with a fork, until all combined.
Guacamole:
1 medium avocado
1 red chilli (chopped)
2 tbsp lime juice
1 garlic (smashed)
Pinch of pink salt and crushed pepper.
Mash the avocado, add the garlic, chilli, lime juice, salt and pepper.
Chickpea pancakes:
1:2 cup chickpea flour
1/4 tsp baking powder
1/2 tsp turmeric
Salt and pepper
3/4 cup water
Instructions:
Make pancakes by adding all dry ingredients together in a bowl and mixing well with a fork to break up any lumps. Pour in water slowly, mixing to a thick batter, it should be thick but easily pourable. Set aside to chill in the fridge while you make your favorite toppings. Healthy grilled chicken caesar salad with chopped avocado, tomatoes and cucumbers. With a simple Caesar dressing. To make the dressing, you need:
1/2 an avocado
1 tbsp Dijon mustard
1 large garlic
1 lemon juiced
1/2 tsp pink salt
1/2 tsp crushed black pepper
A Splash of homemade almond milk (or any milk)
1 tbsp olive oil
Instructions:
Place all ingredients into a food processor and pulse for a few minutes until creamy. Enjoy!

Aquafaba Chocolate mousse, so simple, delicious and guilt free. 🙌🏻
To make it:👇🏻
Ingredients:
1 can of chickpeas (you will need only the liquid which is about 1 cup). (I’ve-used the carton organic chickpeas instead of cans).
100g chopped dark chocolate
2 tbsp raw cocoa powder
1/2 tsp vanilla powder
2 tbsp maple syrup
Instructions:
1- Melt your chocolate in a bowl placed over a pan of simmering water.
2- Add the maple syrup, cocoa powder and vanilla
3- let chocolate cool down while you prepare the next step
4- Mix the liquid of the chickpeas with an electric whisk (or blender). Whisk until form and you have a fluffy white consistency.
5- gently fold in the chocolate with spatula, and slightly stir it.
6- pour into bowls and place in the fridge for 2 hours. Enjoy. #Healthybyhuda #dairyfree #love #chocolate
