It's National Banana Day today. Let's go bananas and bake some Chocolate Banana Muffins.
Ingredients (makes 12 muffins)
1 1/2 medium bananas
1 C (250 ml) sugar
1/4 C (60 ml) vegetable oil
1 tsp (5 ml) vanilla extract
1 C (250 ml) all-purpose flour
1 tsp (5 ml) baking powder
1 tsp (5 ml) baking soda
1 tsp (5 ml) Cinnamon (ground)
1 C (250 ml) low-fat plain yogurt or low-fat sour cream
1/4 C (60 ml) milk chocolate chips
Preheat the oven to 375° F (190° C).
Mash bananas with a fork, measuring about 1 1/2 C (375 ml).
Using an electric mixer, beat bananas with sugar, oil, egg and vanilla extract in a large bowl until well mixed.
Whisk flour with baking powder, baking soda and Cinnamon in a large bowl. Pour banana mixture overtop. Using a spoon, gently stir together, then stir in yogurt and chocolate chips.
Spoon batter into a lightly oiled muffin pan and bake in centre of oven for 15-18 minutes until a cake tester inserted in centre of muffin comes out clean. Let stand 2 minutes, then turn out of pan.
