It's been a looooong Summer! We made #sourdough pancakes this morning from fermented millet dough and self raising flour. Not quite #injera or #canjeero. I added no yeast at all, just allowed the naturally wild yeast from the air which fermented the millet to do its job. I added a pinch of salt to the batter and fried it in butter. I served it with maple syrup. Good Lord. It was so tasty. And all #vegan, save the butter. The millet flour (finger millet, ragi flour) I got this time from TRS foods is so nutty and pleasantly delicious. Wow!

Join us next week as we delve into fermented millet porridge and wrap up our Summer series on dorkunu, kunu, dough, ting, tuwon and everything in between. They are all connected. It has been so much fun. (Check out our previous posts, it all started with pancakes, then we got lost in this journey that has taken is back to 16th century West Africa). After that? Let's see. I recently joined @vanessakimbell's Sourdough School thanks to the amazing @thegfw. It gives me so much to reflect on. I guess I will be playing with dough a little bit longer, but not our West African steamed version. Stay tuned.

Hello Instafam! I have an update. We are on the move yet again :).

In about 3 weeks, we will be bidding adieu to Colorado 😢. We are excited about the move but will also miss Colorado. So in these last few days, we are trying to visit all of our favorite places, sun or rain, we do go out!

Two of our favorite hangout places are the Children's Museum in Downtown Denver, and the Bear lake at Estes Park in the Rockies. And our favorite must carry snack is the Finger Millet (Ragi) nice cream made from the @fructus_terra Ragi Satva. The Ragi satva makes the nice cream extra creamy and gives a nice Caramel colour. Also, the addition of Ragi satva makes the nice cream even more nutritious. Now that my daughter is growing up and developing an even greater like for junk food, I do not want to miss out on a single opportunity to enhance the nutritional value of everything she eats. .

Btw, as you are reading this, many in India and maybe around the world are working on Developing Ragi ice cream. It will be soon seen in several ice cream outlets around the country. So why not make it at home already :)? The Fructusterra Ragi satva makes the job really easy as it already is sweetend with jaggery and has a great cardamom flavor.

Waking up to feel completely normal and energetic is such a good feeling.... While the weather is gloomy so much like my hometown.. Early morning showers.... Went for a long walk, cleaned my house... Cooked an elobarate slightly unusual meal for ourself (yes... I cook early in the morning when it's still quite)

Started my day with this humble yet power-packed #breaky raagi /Finger Millet manni/porridge (its similar to #raagiambli with a twist to ingredients). Its an age old remedy to cool down your body, lift your energy. Very easy to prepare ➡️ Mix 2 tbsp raagi flour in half cup water into thick lump free paste. In a wide pan add 1. 5 cup water to boil, add in the prepared paste. Mix well and wait till it boils giving it a mix every now and then. Wait till the mixture becomes glossy and shiny, then add 1 tbsp (increase if you want more sweet) jaggery powder. Mix well and add 1/2 to 1 cup milk and boil well. You can add cardamom powder

Lentil and moringa dip now on the menu at @figandmapledelhi . This dish is made of red masoor and moringa both super foods! If there’s one type of ingredient over which Indians could safely claim mastery, its legumes or dals. We almost definitely eat more dals per capita than anyone else; with so many vegetarians, we need their protein. We are among the top producers in the world (despite the government’s shameful neglect of the category). We use them in more ways, in innumerable recipes and in their different forms: fresh, dried, whole, split, skinned, ground, roasted or fried as snacks. The word masoor is supposed to have originated in a native Indian aboriginal language. Super easy to make, I’ll post the recipe super soon!
PS- Requiring little water to grow, lentils have a carbon footprint 43 times lower than that of meat. 
PPS- Moringa, also called the drumstick or horseradish tree, is often referred to as ‘the miracle tree’ because of its exceptional qualities. It is fast-growing and drought-resistant. The trees form a natural windbreak, helping to prevent soil erosion, The leaves are highly nutritious and grow plentifully all year round. Many parts of the tree are used in traditional medicine throughout India and Asia. .

Sometimes simple is just better. Had a healthy and satisfying breakfast today..Ragi rotti (Finger Millet)😋 Here's a quick and healthy recipe for our morning rush.

How to cook :
1. To a bowl, add Raagi flour, Cumin seeds, finely chopped - Green chillies, Ginger, Onions, Coriander leaves and salt. Mix well. 
2. Add hot water little by little, mix it with a spoon. Let it cool down. Once you can handle the heat with your hand, knead and make a soft dough.
3. Divide the dough into balls of similar size. 
4. For making rotis:  take a banana leaf or damp cloth or polythene sheet. Grease it with oil. Place a ball on it and pat it gently with your fingers. The rotis should neither be too thick nor too thin. 
5. Heat dosa tawa, transfer the roti to it  carefully. Drizzle oil whenever necessary. Cook on both the sides.
6.Serve hot with any chutney.

How to cook :

My lentil and moringa dip now on the menu at @figandmapledelhi . We as chefs have the power to make other wise thought of as run of the mill staples into innovative dishes which appeal a lot more to the palate of our guests. This dish is made of red masoor and moringa both super foods! If there’s one type of ingredient over which Indians could safely claim mastery, its legumes or dals. We almost definitely eat more dals per capita than anyone else; with so many vegetarians, we need their protein. We are among the top producers in the world (despite the government’s shameful neglect of the category). We use them in more ways, in innumerable recipes and in their different forms: fresh, dried, whole, split, skinned, ground, roasted or fried as snacks. The word masoor is supposed to have originated in a native Indian aboriginal language. Super easy to make, I’ll post the recipe super soon!
PS- Requiring little water to grow, lentils have a carbon footprint 43 times lower than that of meat. 
PPS- Moringa, also called the drumstick or horseradish tree, is often referred to as ‘the miracle tree’ because of its exceptional qualities. It is fast-growing and drought-resistant. The trees form a natural windbreak, helping to prevent soil erosion, The leaves are highly nutritious and grow plentifully all year round. Many parts of the tree are used in traditional medicine throughout India and Asia. .
