Tapa is a Filipino dish that is traditionally made with thin strips of beef, marinated in soy sauce, calamansi, sugar and garlic. But since there was a time when I had to feed Dad with a no-beef diet, I came up with the alternative of using chicken thigh fillet strips instead.
This recipe uses basic pantry ingredients such as soy sauce and pepper. And I decided to skip the marinating part to lessen the sodium in the meat. You may also add a little brown or coco sugar right before you turn off the fire, if you prefer that sweet tapa taste. And as they always say in Filipino, "Tikman mo ang niluto mo," or taste the dish you are cooking.
