Hearty Lemon-Chicken 🍋 🐓 Soup with Whole Wheat Orzo!
This was so good and my husband loved it too! He was literally doing the dishes, washing out the container that held the leftovers and was saying “Wow, I know this only has scraps in it because we ate it all already, but it smells so good I wish there were more for me to eat!” He was literally drooling over an empty container that only contained the smell of this soup! It was that good! It was creamy, but light enough to be a soup you could enjoy on a hot summer day, while still being substantial enough that you could enjoy it as a whole meal! This, straight up, was really delicious!

Weight Watchers Smart Points: 2 SP per Serving
20 oz Chicken 🐓 Breast @greenwisemarket
1 Carrot 🥕 @publix
1 Celery Stalk
3/4 tsp Salt 🧂 @mortonsalt
1/4 tsp Black Pepper @mccormickspice
4 Cups Chicken 🐓 Stock @swansonbroths
1/2 Cup Whole Wheat Orzo @barilla @barillaus @barillaitalia
2 Eggs 🥚 @egglandsbest
3 Tbs Lemon 🍋 Juice
2 Tbs Fresh Dill
1) Place chicken, carrot, celery, onion, 1/4 tsp salt, and pepper in a @calphalon pot. Add chicken stock and bring to a boil. Reduce to a simmer, cover, and continue cooking for 20 minutes.
2) Transfer chicken to a plate. Add orzo to chicken stock mixture and cook for 6 minutes. Meanwhile, shred chicken once cool enough to handle.
3) Whisk eggs, lemon juice, and remaining salt until frothy in a separate bowl. Stirring constantly, add 1/2 cup of chicken stock mixture to the egg mixture. Stir egg mixture back into chicken stock mixture. Add chicken back into soup. Cook until chicken is thoroughly reheated. Ladle into 4 separate @williamssonoma bowls and top with dill.
